At Roots Catering we create menus with our community in mind. When choosing items to use as main entrees we search for dishes that will highlight the fresh beef and poultry we have in the area. We use University Farm beef, pork and lamb. Our poultry is always hormone and cage free raised. For our seafood we choose only fish and shellfish that are considered sustainable and whose consumption does not greatly impact the environment. For our resource we use the "Seafood Watch" publication printed by Monterey Bay Aquarium.
